Maple Salmon Recipe

Here’s a great maple salmon recipe for anyone craving salmon this week!

Maple Salmon Ingredients
1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 pound of wild salmon

Directions
1. In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
2. Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
3. Preheat oven to 400 degrees F (200 degrees C).
4. Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Vancouver Fishing Report for July 5th

Vancouver Salmon Fishing
The Vancouver saltwater fishery has been fair over the past week. Due to unfavorable water conditions throughout Vancouver harbour, most of efforts have been focused towards the Gulf Islands fishery. We have been averaging 6-8 Chinook hookups on our 10 hour charters, with fish ranging from 10-25 pounds. Most our fish have been taken on anchovies in a green/glow teaser head with a 66” leader connected to a green hot spot flasher. Depths this week have averaged between 90-140ft.

Fraser River Sturgeon Fishing
The Fraser River sturgeon fishery has been fair to tough this past week. Water conditions are unfavorably high with plenty of debris. We are working hard for our fish but our hard work has usually been paying off. There has been some bigger fish taken in the last few days, with one reaching 7’7”. Our baits of choice this week have been Lamprey Eels and Eulochons. Once the water levels start to stabilize we will see some more productive fishing.

Pitt River Fly Fishing
The Upper Pitt River has been fishing well for this time of year. Water conditions have been consistently good, and we have been seeing a few bull trout reaching the 10 pound range, with the average fish being around 3.5. Fly fishing is always our method of choice for fishing the pitt with our best flies right now being egg sucking leeches and larger “flash” flies fished on sink tip lines.

Fraser River Sturgeon Recipe

Aha!  Gotcha! We are kidding of course…the retention of Fraser River Sturgeon is strictly prohibited and need to be safely released…so now that we’ve got your attention check out one of our favorite Salmon recipes:

Baked Salmon Fillets

12 large spinach leaves
4 salmon fillets approximately 4lbs.
1 tablespoon fresh dill, chopped
Salt & pepper to taste
1 cup cold water
1 1/2 teaspoons butter or margarine, melted
2/3 cup green onions, sliced
1 clove garlic, minced
Preheat oven to 325ºF.

Arrange spinach leaves on the bottom of a 13″x9″ baking dish. Lay salmon on top. Sprinkle salmon with dill, salt and pepper. Mix water and butter or margarine together and pour it over the salmon. Top with green onions and garlic. Cover the baking dish tightly with foil.

Bake for 25 to 30 minutes, or until salmon flakes easily when tested with a fork, basting two or three times. Serve with the spinach and juices.

Serves 8
